Thanks I have it bookmarked. Here is the recipe in case anybody else wants to try it:
My wild mushroom risotto is a thing of beauty. This is the best risotto you will ever make. I use chicken stock, but I imagine veg stock would be ok. Will make 4:
100g porcini mushrooms
675 flat field mushrooms
olive oil
3 cloves of garlic
2 tablespoons of parsley
juice of 1 lemon
1 litre of good quality chicken stock
150g butter
1 medium sized red onion
300g risotto rice
75ml vermouth
175g parmesan
1) soak the porcini in enough warmish water to cover them.
2) fry the field mushrooms for 15-20 minutes or so
3) in a seperate pan, fry the porcini and garlic for a minute
4) add half of the porcini juice to the porcini and garlic pan and then reduce until there's around a tablespoon of liquid left
5) add the field mushrooms, salt and pepper, parsley and the lemon juice to the porcini pan. cook very briefly together and then remove from the heat and set aside.
6) melt half of the butter and fry the onion till it's soft.
7) take the onion off the heat, add the rice and coat in the butter
8) add the rest of the porcini juice to the rice, place on a low heat and cook the porcini by adding a ladlefull of stock, letting it absorb and then adding another until all of the stock is gone and absorbed. stir pretty regularly (as an aside this one main way that risotto differs from paella - you shouldn't stir paella as the grains aren't supposed to stick together)
9) add the vermouth, the rest of the butter (in chunks) and the parmesan. stir it around, add the mushrooms and serve.

All I can think about is what I am currently craving. A rice pilaf with copious quantities of mushrooms.

Make yourself some simplified nasi goreng. Fast, tasty, adaptable.
Dice some veggies very small - onion, celery, bell pepper, carrot if you like.
Finely chop some fresh ginger, couple garlic cloves.
Fry in oil - peanut or sesame is nice, but any veg oil is fine. Better still, mince up a couple slices of bacon, fry that first and throw the veg in with.
Add to taste your favourite curry spice mix, a good scattering of cumin seeds, chili flakes to taste - or another fresh hot pepper if you like.
Saute some more to bring the flavour out in the spices/curry
Add a couple or more cups of cold cooked rice (add a bit more oil if needed), stir fry until hot and glistening. Make a couple hollows in the rice, drop an egg gently into the depressions, reduce heat to low. Cover pan until egg whites are almost firm, yolks still runny. You can break the eggs up while still in the pan or lift them out carefully to serve individually. Either way, stir the broken eggs into the hot rice.
Alternatively, don't cover pan, just stir the raw eggs into the rice to cook them.
